Vinegar (ethanoic acid) is a liquid, obtained from ethanol during a fermentation process, which gives its main ingredient called acetic acid. This is the commercial method of preparation, which takes place slowly over a few weeks or even months. The other preparation method involves the oxidation of ethanol derived from different sources like wine, beer, cider, fruit juices, etc. by certain bacteria.
So, depending on the fruit or raw material it is made from and the method of processing, vinegar contains varying concentrations of minerals, vitamins, fiber, enzymes, and other organic compounds. Being a dilute solution of acetic acid, vinegar has the same chemical formula as the acid. One molecule of this compound contains two atoms of carbon, four of hydrogen and two of oxygen, and therefore vinegar is represented in a chemical form as CH 3 COOH.

The pH value essentially determines the degree of acidity or basicity of a solution. The pH value of any solution is rated on a logarithmic scale, noting 0.0 to be the most acidic, 14.0 the most basic or alkaline, and 7.0 to be the neutral point.
Therefore, to decide whether a solution is acidic, basic or neutral in nature, one must know its pH value, which is measured by calculating the concentration of hydrogen ions (H + ) and hydroxyl ions (OH – ) present in the solution. Mathematically, the pH is equal to the negative logarithm (base 10) of the hydrogen ion concentration in moles per litre. Therefore, if the pH of a solution decreases by one pH unit, its hydrogen ion concentration increases tenfold.
The solution with the highest pH is the one with the lowest concentration of hydrogen ions.
A solution with an increased level of hydrogen ions implies that it is acidic in nature, while less hydrogen ions (H + ) and more hydroxyl ions (OH – ) show that the solution is more basic or alkaline by nature. However, if the levels of hydrogen (H + ) and hydroxyl ions (OH – ) are approximately equal, it implies that the solution is neutral. The pH of vinegar depends on the amount of acid it contains. Most commercial distilled white vinegars contain 5% acetic acid and therefore have a pH value between 2.40 and 3.40.

Although vinegar comes in different varieties, apple cider vinegar is the most commonly used example, which is prepared from apple cider. It contains alkaline ash which improves the pH level of the body making it less acidic. Basically, the pH of apple cider vinegar, which is somewhere between 2.8 and 3.0, makes it more powerful in maintaining a healthy pH in the body by restoring acid alkaline balance and boosting the immune system. .
For these reasons, a little apple cider vinegar is usually taken before a meal to increase stomach acid and improve digestion and nutrient absorption. Additionally, some people prefer to take it with water and a few drops of Thieves essential oil in the early hours of the morning, to improve their body’s pH level. Apart from that, it is also used in various salad dressings and other recipes.
Due to its acidity, vinegar can be very harsh on the throat. Therefore, before drinking it, be sure to dilute it with fruit juice or water, or sweeten it with sugar or honey.
